Ingredients (4 servings)
- 500ml of milk.
- 75g of sugar.
- 4 egg yolks.
- 15g of cornstarch.
- 1 lemon peel
- 1 cinnamon stick
Steps to make Catalan cream:
STEP 1
Heat the milk in a saucepan with the cinnamon stick and lemon peel. When it boils, turn off the heat and let it cool for a few minutes.
STEP 2
In a bowl, mix the egg yolks with the sugar and cornstarch.
STEP 3
Little by little, pour the milk into the bowl and stir at the same time so that the egg does not curdle due to the heat.
STEP 4
Pour the mixture into the saucepan and put it back on the heat. Stir while heating over low heat until it thickens.
STEP 5
We divide the mixture into 4 ceramic containers and let it cool.
STEP 6
Before serving, sprinkle sugar over the entire surface and caramelize it with a blowtorch or a griddle, and then serve.
