Cómo hacer cuajada casera, tradicional con el recipiente original

How to make homemade, traditional curd with the original container

Ingredients (4 servings)

- 600ml of fresh pasteurized milk (preferably sheep's milk).
-12 drops of liquid rennet (you can buy it at the pharmacy or supermarket).

Steps to make homemade curd:

STEP 1

Before you start heating the milk to make the curd, it is important to know that you need to have a kitchen thermometer because knowing the temperature of the milk is essential for the type of rennet you have purchased:

  • If you have bought the rennet at the pharmacy, you have to put the sheep's milk in a saucepan and heat it on the stove until it reaches 37-38ºC.
  • If you have bought the rennet in the supermarket, you have to put the sheep's milk in a saucepan and heat it until it reaches 50-55ºC.

STEP 2

Prepare 4 ceramic bowls or jars and put 3 drops of liquid rennet in each one. It is one drop for every 50ml of milk.

STEP 3

Pour the milk at room temperature into each jar and let it set without stirring. It takes approximately 10 minutes.

STEP 4

Once it has set, put the curds in the refrigerator.

STEP 5

Enjoy your cuajada. You can add honey, agave syrup or nuts to enhance the flavour.

The importance of a good container for curds

It is important to serve the curd in a traditional container, such as a ceramic one. Ceramic gives it an exclusive and familiar touch, which will make your family, friends and guests feel as if they were at home.
