Ingredients (4 servings)
- 500ml of liquid cream or milk cream 35% MG
- 60 g of sugar.
- 4 egg yolks.
- 1 vanilla pod
- 1 pinch of salt (2 g)
Steps to make the Crème brûlée:
STEP 1.
We prepare a water base in which we will place our moulds with the crème brûlée. To do this, we will use a large tray that we fill with about 3 fingers of water, which will then fit the moulds that we are going to use to bake the cream. The water should reach about half of the moulds. Then, we turn on the oven at 160º C and put the tray with the water in the oven for 10 minutes.
STEP 2
In a separate saucepan, heat the cream with the vanilla pod seeds and also add the pod, once opened. Heat the cream for about 10 minutes without letting it boil. Then, remove it from the heat and let it rest for 20 minutes.
STEP 3
In a bowl, mix the egg yolks with the sugar and salt, and beat the mixture until it forms a foamy cream. Then, add the cream little by little, straining it and stirring constantly until it is well mixed.
STEP 4
Pour the mixture into a saucepan and cook, stirring constantly, over medium heat for a few minutes. You will notice how the cream begins to thicken.
STEP 5
Pour the mixture into the bowls you have chosen for the crème brûlée and place them inside the tray that is heating up in the oven.
STEP 6
Remove the tray from the oven and allow the cream to cool. Do not put it in the refrigerator until it has cooled.
STEP 7
Cover each cream with 2 tablespoons of sugar and toast it with the stove burner until it becomes caramel-like.
